'Cooked over embers'

Our Story

FIRE. FLAVOUR.
FUSION.

Közle (koz-leh) means "cooked over embers" in Turkish, not just a name but an entire philosophy. The finest cuts, marinated overnight with spices passed through generations, laid over charcoal that glows rather than burns.

Alongside the grill, our mezze is built for sharing. Home-made hummus, chargrilled aubergine, warm flatbread. All elevated by our fusion dishes for an entirely unique dining experience in Newcastle.

WHY WE'RE DIFFERENT

01

The Charcoal

We use only natural charcoal, never gas. The embers impart a depth of flavour no other method can replicate; smoky, complex, unmistakably real.

02

The Marinade

Every cut is marinated overnight in our house blends. Time and patience are our secret ingredients, allowing the spices to fully penetrate and transform the meat.

03

The Fusion

Rooted in centuries of Turkish and Levantine grilling tradition, every dish we serve honours the craft passed down through generations of skilled pit masters; and elevated with our fusion creations.

This Is Not Just Food.
It never has been. It never will be.
This is KÖZLE.
Charcoal. Patience. Craft. Fire.

Közle

/ köz·le / — Turkish, verb

To cook over glowing embers. Not flame, not gas - embers. The ancient method that demands patience, attention, and respect for the ingredient. At Közle, this is not a technique. It is our entire philosophy.
